While I'm sure most of you have your cupboards stocked with delicious things like frozen pizza and chips (and believe me I wish I was one of you), I had some broccoli and cauliflower that I needed to get rid of and a new recipe from a friend that I wanted to try. Broccoli-Cauliflower au Gratin.
This was ah-mazing! In that way that sometimes if you cover vegetables with cheese they magically taste better to some people way. This was WAY better. The way the sauce cooked down into the vegetables made the whole dish just melt in your mouth!
Broccoli-Cauliflower au Gratin
INGREDIENTS:
* Broccoli florets
* Cauliflower florets
* 1 1/2 cups mayo
* 2 tbsp. Dijon mustard
* Cayenne pepper
* Shredded parmesan
* Shredded sharp cheddar
DIRECTIONS:
1) Preheat oven to 350 degrees
2) Steam broccoli and cauliflower and drain
3) Place vegetables in a single layer in a greased dish
4) In a separate bowl combine mayo, Dijon, cayenne, parmesan and cheddar
5) Spread the mixture even an even layer over the top of the vegetables
6) Sprinkle a little extra parmesan and cheddar over the top
7) Back for 20-25 minutes
