Polpette di Carne! Meatballs!



Who doesn't like homemade meatballs?  And if it's you then leave my blog.  Right now.  Go away.  I make a kick ass meatball and it had been forever since I pulled out this recipe.

Meatballs recipes are kind of alike and you can just vary the ingredients, so feel free to have fun and come up with your own spin on this awesomeness.

Put all your ingredients in a bowl and combine.  And if you're like me you'll use like 18 cloves of garlic instead of 4.


In a pan put vegetable or extra virgin olive oil until it covers about 1/3 of the meatball.  Place meatballs in the pan and start to cook.


Turn meatballs when they're golden brown and cook other side.  They cook fast so keep an eye on them.  Once done put them in a favorite pasta or sprinkle with fresh grated cheese like I did and eat plain!


Meatballs
INGREDIENTS:
* 2 lbs of your favorite meat (ground beef, pork, veal, chorizo)
* 1 small yellow onion, diced
* Fresh diced garlic (5 or so if you're normal, 15-20 if you're me)
* 2 eggs
* Handful of bread crumbs
* Package of Italian seasoning
* Garlic powder, fresh grated pepper, salt
* Dash of Worcestershire
* Dash of extra virgin olive oil
* Fresh diced Cilantro

DIRECTIONS:
1) Saute onion before adding to mixture
2) Mix all ingredients together and form into balls, being careful not to leave any openings
3) Place meatballs in pan and put oil about 1/3 way up (olive oil or vegetable or both)
4) Cook till golden brown on one side and flip over
5) Cook other side and you're done!



No Carb Pizza. Seriously.

No carb pizza.  With crust.  Fucking serious. The shit exists people, and it's delicious.  My awesome friend found this recipe in her low-carb recipe search and was kind enough to pass it along because she fucking rocks!

It's pretty simple.  Cream cheese (obviously you know it's awesome already, it has cream cheese), Parmesan, egg and seasoning.  Just those little ol' ingredients can actually make a crust!  No people, this isn't Chicago deep dish so get real for a second if that's what you expect.  But this is a damn good, thin crust option for you guys.

Whisk all your ingredients together and put in a greased, 9x13 pan.



Bake then top with your ingredients:


Put back in the oven and bake till the toppings are cooked.  


Now eat the shit out of this amazing no carb pizza and thank me later.

Crust:
INGREDIENTS:
* 1 full fat package of cream cheese, room temp.
* 2 eggs
* Fresh ground pepper
* Garlic powder
* 1/4 c. fresh ground Parmesan

DIRECTIONS:
1) Preheat oven to 350 degrees
2) Butter a 9x13 baking dish
3) Blend cream cheese and eggs, and season with pepper and garlic powder
4) Add Parmesan cheese and stir until combined
5) Pour into dish and back for 30 minutes or until golden

6) After crust is cooked, raise over temp to 400 degrees
7) Put your favorite marinara sauce on top
8) Add toppings and cook until cheese is melted - approximately 8 minutes

I mean, I'm sure you guys missed me, but at least I'm coming back with this awesomeness.  Cupcakes make everything better.  They also make your co-workers happy.  And when your co-workers are happy, everybody is happy.  You gotta see these people all the time, you may as well try and buy their work friendship (aka give them incentive to put up with my ridiculousness).  So these happened and went with me to work the other day.  French vanilla with chocolate chips, strawberry cream cheese frosting and fresh strawberries and raspberries on top.  Simple and ah-mazing.

Oh you want the recipe?  I have this good friend - Betty Crocker.  If you don't know her then you're living in a damn hole and should look her up.  I've told you before that I DON'T BAKE so when I do I take the easy way out.  But being easy is delicious sometimes ;-)
